Healthy Breakfast Recipe - Gluten Free Pancakes

If the term "healthy breakfast"  is normally associated with hard work, both making and eating it, banana pancakes might just surprise you! These are not only healthy but also taste amazing. They can be made in advance,  taken with you and they make great snacks.  

In my quest to transition my kids from chocolate rice pops, I've been trying a few alternative breakfasts, (porridge I'll have to come back to at a later date!)...but even my two love these.

You can make a paleo version if you're reducing carbs by omitting the oats and adding a bit more coconut flour and ground almonds or almond meal instead.

You can also make these with just 2 ingredients, banana and egg, how simple is that?!

Banana Pancakes (makes about 8)

2 tbsp coconut flour

4tbsp oat flour (readybrek or porridge oats whizzed in a processor)

2 eggs

2 medium bananas

1 tbsp oil (you can add this to the pan when cooking)

vanilla extract or large pinch of cinnamon (optional)

A pinch of baking powder

Mix all ingredients together in a food processor, or mash together with a fork. Cook the pancakes for 1 -2 minutes on each side and serve with yogurt or berries, delicious!
